Hey lovelies! I know a lot of people have been enjoying spending a little more time in the kitchen during ISO, whether it be baking or cooking… Something I’ve been baking almost once a week is this simple zucchini slice (it’s become my equivalent of the banana bread meme at this point haha!).
I’ve posted some baking pictures on my Instagram from time to time, and lots of lovely people have said they’d be interested in seeing more recipes on my blog, so I thought I’d start with this one, a favourite in my family 🙂
This is my own recipe but this photo is from the Donna Hay website because my photos aren’t as chic hehe 🙂
Zucchini Slice Recipe
4 zucchini (or 365g) – grate and drain.
1.5 cups SR flour (add more as needed).
1/2 – 3/4 cup of oil
1 cup of cheese (I use a mix of grated Parmesan, Danish feta and ricotta).
1/2 bag of spinach.
+/- spring onions.
Top with sliced tomatoes.
Preheat oven to 175 degrees.
Grate the zucchinis and drain any excess water/liquid in a colander.
Mix together all the dry ingredients with the zucchinis.
Add in the ‘wet’ ingredients and mix thoroughly.
Gently pour into a slice tin (lined with baking paper).
Top with sliced tomatoes – I’d recommend spacing them depending on how you plan on slicing it. This will make it easier to cut into squares once it’s cooled down and look cuter.
Bake to 40-45mins (may need longer depending on your oven, so I’d recommend checking to see if the slice is cooked through, golden and crisp).
